
Chablis is located between Paris and Dijon in northern Burgundy.
Chablis’ neighbours are the Champagne area and the Côte d’Or department, and it is the northern-most of the Burgundy winemaking areas.
The area covers about 12,400 acres (5,000 hectares) and wine is produced there using the Chardonnay grape variety. Four Appellations d’Origine Contrôlée (controlled terms of origin) mark out the boundaries of the area:
- Petit Chablis – grapes harvested on the plateaux
- Chablis – grapes from exposed hillsides in the north and east and from the plateaux
- Chablis Premier Cru – grapes from exposed hillsides in the south and west
- Chablis Grand Cru – grapes exclusively from Chablis and from Fyé,
from hillsides on the right bank of the Serein River.
